Unleavened Cake Recipe

Chicote clarifies that his recipe is extremely simple and that he has only added cocoa and cinnamon to enhance its flavor, and taking into account its properties with high antioxidant levels.

Ingredients:

  • 6 eggs
  • 100 grams of sugar
  • 100 grams of flour
  • 100 grams of milk
  • 100 grams of virgin olive oil
  • 1 tablespoon of cocoa powder
  • Grated orange and lime or lemon
  • A little cinnamon

Preparation:

  1. Boil the milk with the oil and the orange zest and let it rest
  2. Separate the yolks from the whites .
  3. When the milk mixed with the oil is below 60 degrees temperature, add the yolks and mix well with a rod.
  4. Add the flour to the mixture slowly, always mixing. It also combines cinnamon and cocoa.
  5. Put the whites and sugar in a bowl and beat until just before the snow point.
  6. Mix the two shakes very carefully and slowly.
  7. Prepare a baking sheet by covering the bottom and sides with non-stick paper.
  8. Place it on a tray with water and bake in a water bath at 150 ° C for 1 hour.
  9. Raise the oven temperature to 170 ° C and bake for an additional 10 minutes.
  10. Remove the sponge cake from the oven and allow it to cool completely.
