Potato churros with mustard and cheese

Being in confinement does not mean giving up impressive bites. Some potato churros with mustard and cheese will make us feel like real chefs at the best restaurant in town. They are very easy to prepare and offer us a tapa or appetizer that is a real vice. With mashed potatoes you can get some spectacular savory churros.   • 400 gr of mashed potatoes
  • 2 egg yolks
  • 50 gr of refined corn flour
  • 15 gr of cheese
  • 15 gr of mustard
  • Salt
  • Black pepper
  • Olive oil

How to prepare potato churros with mustard and cheese

  1. These potato churros are very easy to cook we must make ourselves with a few ingredients that we will surely already have at home. The base is a good mashed potato.
  2. With lack of time you can opt for a prepared puree but if we want to enjoy the art of making this recipe from scratch we will do it in a moment.
  3. We peel the potatoes and chop them . We will cook them with a good amount of water and salt. It will take about 20 minutes to be ready, depending on the size of the pieces.
  4. When we have the potatoes ready, we put them in a bowl with two tablespoons of butter and half a base of milk. We crush everything until we get a consistent puree. Season with salt and pepper to taste.
  5. The puree will be the base of this dough that will have some more ingredients. We incorporate the egg yolks .
  6. The egg will give it consistency and color. It is important that the puree this temperate or cold, in this way there will be no danger of curdling.
  7. We add the cheese . We can use any variety, the one we have at home or we like more. We grate it to the moment so that it is integrated into this mass.
  8. Finally, we put the mustard . If we are not very fond of this sauce, we add a little less, just enough to give it a more marked color.
  9. We stir until we have all the ingredients well integrated . We put the dough in a pastry bag.
  10. We prepare the oil we put a good amount and the pan, wait until it is very hot. We fry the potato churros.
  11. We brown and cook the churros in the fryer. When they are ready we put them on absorbent paper. We serve with a tomato sauce or a little mayonnaise, they are impressive.
