Lamington cupcake recipe

This lamington recipe is perfect for making that popular dessert sold in many Australian and New Zealand supermarkets at home. The base is a common sponge cake that is then covered with a mixture of sweet cocoa and sprinkled with grated coconut. Once the lamingtons are made, they can be kept in an airtight container. For the cake:

  • 1 cup of sugar
  • 125 gr. butter

  • 1 ¾ cups of flour

  • 1 teaspoon of vanilla essence
  • ½ cup of liquid milk
  • A pinch of salt
  • 1 tablespoon of butter (to grease the mold)

For coverage:

  • 2 ¼ cups sugar
  • 1 tablespoon of butter
  • 4 tablespoons of cocoa powder
  • ½ cup of liquid milk
  • 200 gr. grated coconut (to coat)

How to prepare the lamington recipe :

  1. Preheat the oven to 180 degrees.
  2. Sift the flour into a bowl, add the salt and baking powder . Mix and reserve.
  3. In another container, add the vanilla and milk . Mix and reserve.
  4. Put the butter and sugar in a large bowl. Beat with the electric mixer for 3 minutes until the mixture is pale and fluffy.
  5. Add an egg to the previous mixture, beat very well . Then add the other and continue mixing.
  6. Add half of the flour mixture and half of the milk and vanilla mixture to the previous mixture . Stir with a wooden spoon with enveloping movements.
  7. Add the rest of the flour mixture and the rest of the milk and vanilla mixture to the bowl . Mix gently.
  8. Grease with butter a mold of about 20 x 20 cm., Suitable for the oven. Pour the cake mixture and bake for 30-35 minutes. Remove and let cool.
  9. When completely cooled, cut the cake into 16 pieces of equal size.
  10. For the topping, put the sugar and cocoa in a large bowl . Add butter and milk and mix very well until smooth and light.
  11. Pour the cocoa mixture over the biscuit pieces and cover with grated coconut.
