  • 1 kilo of salmon loin
  • 4 Tomatoes
  • 1 avocado
  • ¼ cup of pumpkin seeds
  • 1 clove of garlic
  • ½ cup of basil
  • 1 tablespoon of lemon juice
  • Salt
  • Water
  • Olive oil

How to prepare avocado skewers with salmon and pesto:

  1. Clean the tomatoes and cut each one in half .
  2. Cut the loin of salmon into medium pieces and of considerable thickness.
  3. Remove the pulp from the avocado and place in a food processor .
  4. Add the basil, pumpkin seeds, garlic clove and lemon juice to the processor.
  5. Add water little by little until the mixture has a slightly pasty consistency .
  6. Correct the salt and lemon in the avocado pesto.
  7. Place the pesto in a bowl of a certain depth .
  8. Marinate the salmon pieces in the pesto and put in the fridge for 40 minutes.
  9. Assemble the skewers placing the salmon and tomato respectively until the rods are filled .
  10. Heat the griddle or grill and add olive oil. Cook for approximately 15 minutes until the salmon is golden brown .

Another option is to cook the skewers using the oven . To do this, it must be preheated to 200 degrees Celsius and cook the marine meat for 15 to 20 minutes.
