The coronavirus quarantine has brought changes in our daily lives . The closest restaurant has closed its doors or it is impossible to reach the places that were previously frequented. Cream of spinach

Ingredients:

  • 1 bunch of spinach
  • 1 large potato
  • 1 onion
  • Salt
  • Extra virgin olive oil

How to prepare spinach cream:

  1. Bring the clean, peeled potato to a boil in a saucepan until softened.
  2. Poach the onion in a frying pan with olive oil.
  3. Leaf off the spinach . Wash the leaves and discard the stems.
  4. Put the clean spinach leaves in the pan with the onion until they change color.
  5. Put the minced potato in the blender or food processor with a little water. Add onion and spinach leaves. Crush well or process until you get a cream. If it becomes too thick, add a little water and reheat in the saucepan.
  6. Serve hot . Bread croutons can be added.

Avocado stuffed with tuna

Ingredients:

  • 1 avocado
  • 1 canned tuna of 230 grams
  • 1 onion
  • Mayonnaise
  • Salt

How to prepare avocado stuffed with tuna:

  1. Choose a ripe but firm avocado .
  2. Chop it in half as symmetrically as possible and extract the seed.
  3. Mix the tuna, the chopped onion into small pieces and the mayonnaise in a bowl.
  4. Put salt to taste.
  5. Serve the tuna mixture in the two avocado halves.

Potato gratin

Ingredients:

  • 3 medium potatoes
  • 2 tablespoons of butter
  • 250 grams of Parmesan cheese
  • 1 teaspoon of garlic powder
  • 1 tablespoon of oregano
  • Salt
  • Pepper
  • Extra virgin olive oil

How to prepare potato gratins: 

  1. Preheat the oven to 200ºC.
  2. Peel the potatoes and cut them into 2 millimeter slices . This can be done with a knife or a mandolin.
  3. Put butter on all the slices on both sides.
  4. Put a layer of potato slices in an ovenproof dish greased with olive oil.
  5. Sprinkle oregano and garlic powder.
  6. Add salt and pepper to taste.
  7. Sprinkle Parmesan cheese until all the potatoes are covered.
  8. Repeat the same procedure creating capable.
  9. Finish with Parmesan cheese.
  10. Bake until the top layer of Parmesan cheese is well browned.
