Corvina Fideua Recipe

A succulent corvina fideua dish is perfect for any celebration or gastronomic gathering . It is a food similar to paella, only it is prepared with noodles instead of rice. It was invented by the cook of a fishing boat, since its captain was very fond of rice. Not having that ingredient, he decided to change it for noodles; the recipe tasted so much that it quickly spread in coastal restaurants .

In order for the sea bass fideua to be good, it is necessary to use thick noodles but hollow, so that they absorb the broth without being heavy. It is prepared in the paella pan, with the addition of seafood, and it can also be seasoned with a little lemon or aioli at the end.   • 500 gr of sea bass
  • 500 gr of thick noodles
  • 250 gr of squid
  • 10 clean shrimp
  • 1 red pepper
  • 1 onion
  • 2 cloves of garlic
  • 1 tomato
  • ½ teaspoon of paprika
  • Salt and pepper
  • Olive oil

For the stock:

  • 1 croaker head
  • 2 carrots
  • 1 onion
  • 1 tomato
  • 2 cloves of garlic
  • Salt and pepper
  • Olive oil

How to prepare sea bass fideua:

  1. For the broth, clean the fish, remove the head and place it in a pot j together with the broken onion, the crushed garlic cloves, the tomato cut into pieces and the chopped carrots.
  2. Cover everything with plenty of water, season to taste, add a splash of oil and bring to a boil.
  3. From time to time, remove the foam that forms.
  4. Cook until vegetables are tender. Strain and reserve.
  5. Besides, heat a frying pan with three tablespoons of oil.
  6. Chop the onion, bell pepper, tomato and garlic.
  7. Brown the croaker cut into pieces, without skin, or bones.
  8. Turn the fish over and add the clean shrimp. Brown for three minutes. Add the squid cut into rings. Saute for three more minutes and add the chopped vegetables.
  9. When they are tender, season with the paprika. Stir and let cook for two minutes. Add the noodles.
  10. Pour hot broth until all ingredients are well covered. Cook until noodles are tender. Grind with salt and pepper. If necessary, add more broth during cooking.
  11. Turn off the heat and cover the pan. Let stand for five minutes.
  12. Serve the sea bass fideua right away.
