Ingredients:
- 500 gr of rice
- 1 broccoli
- 200 gr of clean prawns
- 1 onion
- 1 liter of fish stock
- 2 strands of saffron
- ½ glass of white wine
- 2 tablespoons of butter
- Parmesan cheese grated
- Salt and pepper
- Olive oil
How to make broccoli and prawn risotto:
- Bring a pot with a tablespoon of salt to a boil.
- When the boil breaks, add the broccoli flowers. Let them cook for five minutes. Drain and set aside.
- Heat a deep frying pan and add a little oil.
- Brown the saffron threads for two minutes. Book.
- In the same oil, brown the prawns until they change color. Withdraw and reserve.
